A food hub that efficiently coordinates ordering and delivery of local products\u00a0can increase farmers\u2019 sales, while reducing costs, and the number of miles food travels to\u00a0its destination,\u201d said project leader Anita Deming, executive director of Cornell\u00a0Cooperative Extension of Essex County.<\/p>\n<p>The USDA identifies a regional food hub as \u2018a business or organization that actively\u00a0manages the aggregation, distribution and marketing of source-identified food products\u00a0primarily from local and regional producers to strengthen their ability to satisfy\u00a0wholesale, retail, and institutional demand.\u2019<\/p>\n<p>One hundred and twenty-five farmers, 25 buyers and 254 consumers completed the\u00a0confidential survey conducted by the Cornell Cooperative Extension associations in\u00a0NNY.
